Pineapple Upsidedown Cake

My first attempt at pineapple upside down cake went pretty well. It took me a little while to find a recipe that didn't need to be baked in a cast iron skillet.I would love to try that eventually, but didn't have the time right then. This was a very good cake. The cake itself was nice and moist and soft.And the pinapple and cherries were very good. I like the way that the syrup misture oozed into the cake a little bit but not so much that every bite was a syrupy gooey mess. I don't think that I have ever had this that I remember, so my first experience was a very good one. I wasn't expecting the syrupy glaze stuff to be so good. And let me tell you, I was so scared to flip that thing over. I get so frustrated when I work really hard on something and then I mess up the presentation. This cake was excellent and I would definitely make it again some time. Delectable!!

  4. Hi! What fun that you have started this blog! That upsidedown cake looked amazing :) and I'm sure it didn't last long at home. How nice to have an appreciative crowd to cook for! You're in my "favorites" now (not that you all haven't always been!)
